Vegetable bake

Ingredients Method
1 large potato, scrubbed 1. Preheat oven to 180°C.
1 medium orange kumara, scrubbed 2. Slice potato, kumara, pumpkin,
½ butternut pumpkin courgettes and tomatoes into
½ bag spinach, thinly sliced round slices.
2 large courgettes 3. Layer vegetables in a greased
4 medium/large tomatoes casserole dish. Put potato first,
½ cup grated edam cheese followed by kumara, pumpkin, spinach,
1 tsp powdered vegetable stock courgette and tomatoes on top.
Black pepper to taste 4. Sprinkle with stock and pepper, then
finish with grated cheese.
5. Bake until the vegetables are tender,
