Baigan Masala Recipe

Ingredients :

  1. 2-3 small brinjals
  2. 1-2 medium sized onions
  3. 1 small tomato
  4. 2-3 green chilli
  5. 4-5 almonds
  6. 1 full sized Ginger
  7. Half chunk of garlic
  8. Pinch of turmeric
  9. Jeera powder
  10. Garam masala powder
  11. Kashmiri lal mirch
  12. Dhaniya powder
  13. Cooking oil
  14. Salt as per taste

Detailed Procedure :

  1. Slit your brinjal diagonally
  2. Fry them very lightly and keep them aside
  3. Cut onions in medium sized bulk amounts
  4. Cut tomato also in chunks
  5. Cut almonds not very finely
  6. Now make a paste out of onion, chilli, ginger and garlic
  7. Make a puree out of tomato chunks
  8. Make almond paste also without adding water in it
  9. Heat oil in a pan
  10. Add pinch of turmeric and kashmiri lal mirch powder. Let it fry completely in the oil. This will give a good colour to the gravy
  11. Now add onion paste and let it fry completely
  12. After the onion paste gets fried completely, add almond paste and let it fry. When it begins leaving oil from the sides then add salt and all the dry masala powders
  13. Fry them completely and you will see the colour changing gradually
  14. Add tomato puree and let it fry completely
  15. Now, finally add a little water and let it boil for some seconds
  16. Add fried brinjals into the gravy and let it boil for some good 5 minutes. If needed you can add more water also.

Your baigan masala is ready.
